Recipe: stuffed sweet potatoes

Recipe for stuffed sweet potatoes explained

Ingredients (2 servings)

  • 2 large sweet potatoes or 3 smaller ones

  • 1 package of vegetarian bacon bits (alternative: smoked chicken cubes)

  • 1 stalk of spring onion

  • 70 grams of goat cheese with honey

  • 1 teaspoon paprika powder

  • low-fat quark

  • optional: arugula

Preparation method

  1. Preheat the oven to 200 degrees.

  2. Line a baking sheet with parchment paper and poke holes in the sweet potatoes.

  3. Put the potatoes in the oven for 50 minutes.

  4. Meanwhile, cook the vegetarian bacon bits until they are almost fully cooked.

  5. Chop the spring onion finely.

  6. Fill a bowl with low-fat quark and sprinkle some spring onion over it. Place in the refrigerator.

  7. Remove the potatoes from the oven and cut them in half.

  8. Scoop out most of the filling and place it in a bowl.

  9. Drizzle the halved sweet potatoes with some olive oil and return to the oven for another 10 minutes to make them a bit crispier.

  10. Meanwhile, mix the bacon bits into the scooped-out sweet potatoes and add pepper, salt, and paprika powder. Stir in the spring onion.

  11. Fill the sweet potatoes with the mixture and finally sprinkle some goat cheese on top.

  12. Bake the sweet potatoes for 15 minutes.

  13. Serve with the low-fat quark and optionally some arugula. You can choose to serve it with beans and a piece of meat.
