Courgetti with shrimp and a delicious avocado sauce explained
Ingredients (2 servings)
2 zucchinis
300 grams of shrimp
1 lime
2 spring onions
1 clove of garlic
2 avocados
4 sprigs of basil
2 teaspoons almond milk/regular milk
2 teaspoons pesto
pepper and salt
parmesan cheese
arugula
bag of pine nuts (optional)
Preparation method
1. Place the shrimp in a bowl and marinate them with the garlic, spring onions, half a squeezed lemon, and some olive oil.
2. Cut the zucchinis into strands using a spiralizer.
3. Optional: lightly toast the pine nuts. Then place them in a large bowl.
4. Stir-fry the zucchinis with some pepper and salt for about 5 minutes.
5. At the same time, stir-fry the shrimp for about 5 minutes.
6. In the meantime, peel an avocado, add the basil, milk, pesto, and a splash of water, and blend with an immersion blender until creamy.
7. Divide the courgetti onto two plates and spoon some of the sauce over it.
8. Then distribute the shrimp and pine nuts over the pasta.
9. Optionally garnish with arugula and parmesan cheese.
10. Enjoy!
