Savory broccoli-egg muffins recipe explained

Ingredients (12 muffins):
– 5 eggs and 3 egg whites
– 200 grams of broccoli
– 200 grams of chicken
– large handful of basil
– 8 sun-dried tomatoes
– paprika powder
– curry powder
– 75 grams of grated cheese

Preparation method:
1. Preheat the oven to 200 degrees. Cut the chicken breast into small pieces and marinate with curry powder and paprika powder, then cook in olive oil until done.
2. Cut the broccoli into small florets and boil for 1 minute. Also, chop the sun-dried tomatoes into small pieces and finely chop the basil.
3. Mix the chicken with the broccoli, sun-dried tomatoes, and basil. Season with curry powder, paprika powder, pepper, and salt.
4. Beat the eggs in a bowl and add the grated cheese. Season this with salt and pepper as well.
5. Grease a muffin tin and fill each cup about 3/4 full with the mixture. Then add some of the egg-cheese mixture to each cup.
6. Bake the muffins in the oven for 20 minutes. In the meantime, make a quick salad to serve with the broccoli-egg muffins. Like the one in the photo, with carrot and raisins.
