Ingredients for stuffed peppers (2 persons)
1 yellow pepper
1 red pepper
300 grams of chicken mince
1 red onion
2 cloves of garlic
1/2 zucchini
7 mushrooms
1 small can of tomato paste
150 grams of baby spinach
100 ml Greek yogurt, goat yogurt, or coconut yogurt (depending on what you have at home)
3 sprigs of mint
Preparation of stuffed peppers with chicken mince
Preheat the oven to 180 degrees.
Cut the peppers in half and remove the seeds.
Place the pepper halves upside down in a baking dish.
Drizzle with some olive oil and sprinkle with pepper and salt.
Then place the pepper halves in the oven for about 12 minutes.
Meanwhile, chop the onion, zucchini, and mushrooms.
Cook the chicken mince with one clove of garlic until crumbly.
Then add the vegetables and cook until everything is done.
Then add the tomato paste with a small glass of water.
Remove the pepper halves from the oven and turn them over. Then distribute the other clove of garlic over the halves.
Fill the peppers with the chicken mince and place them in the oven for about 18 minutes.
Then put the yogurt in a bowl and snip some mint leaves into it. Also sprinkle some pepper and salt and mix well.
Remove the stuffed peppers from the oven and serve with the yogurt!

TIP: These stuffed peppers contain a lot of proteins and fats. If you need some carbohydrates to feel full longer, cook a bit of couscous or quinoa and mix it into the chicken mixture before scooping it into the peppers.
