Stuffed bell pepper with lentils, tomato, and chicken

Stuffed peppers with lentils, tomato, and chicken explained

Ingredients for 2 people:
– 2 large red peppers
– 100 grams of chicken breast in pieces
– 1 clove of garlic
– 1/2 red chili
– 1 shallot
– 1 can of peeled tomatoes (400 grams)
– 1/4 zucchini in pieces
– 1 tsp paprika powder
– 1 tsp oregano
– 1 tsp thyme
– 100 grams of canned red lentils
– 20 grams of grated cheese

Preparation method:
– Preheat the oven to 220 degrees.
– Finely chop the garlic, red chili, and shallot. Heat 1 tbsp of olive oil in a pan and sauté the garlic, red chili, and shallot until fragrant.
– Add the pieces of chicken and zucchini to the pan, cook until just done.
– Chop the peeled tomatoes and add them to the pan. Add all other ingredients, except for the peppers and cheese, to the pan as well. Mix and heat. Season the mixture with salt & pepper.
– Cut the tops off the peppers and remove the seeds from the inside. Fill the peppers with the mixture you just made. Top the stuffed peppers with some grated cheese and place them in the preheated oven for 15 minutes until the peppers are tender and the cheese has melted.
