Recipe for stir-fried vegetables with peanuts and ginger explained
Ingredients for 4 people:
– 1 Chinese cabbage
– 2 bell peppers
– 1 carrot
– 1 leek
– 1 zucchini
– 200 grams chicken breast/tofu
– 200 grams whole grain rice
– 50 grams peanuts
Ingredients for the stir-fry sauce:
– 2 tbsp olive oil
– 4 cloves garlic
– 3 cm fresh ginger
– 50 ml soy sauce
– 2 tbsp rice vinegar
– 2 tbsp ginger syrup (can be replaced with honey)
– 1 tbsp sambal
Preparation method:
1. Boil a pot of water for the rice. Meanwhile, chop the vegetables roughly and cut the chicken breast into pieces. Make the stir-fry sauce.
2. Cook the rice according to the instructions on the package.
3. Heat a wok pan over medium heat with 1 tbsp olive oil. Once the pan is hot enough, add the vegetables (except for the Chinese cabbage), the peanuts, and the chicken to the pan. Stir-fry for 10 minutes.
4. Now add the Chinese cabbage and the stir-fry sauce. Stir-fry for another 5 minutes and serve with the rice.
Preparation method for stir-fry sauce:
1. Heat the olive oil in a pan. Finely chop the garlic and ginger and sauté them until fragrant in the pan. Then add the remaining ingredients.
