Salmon with spring onions and green asparagus explained
Ingredients (2 persons)
Salmon 250 grams
Green asparagus 200 grams
1 Spring onion
1 Clove of garlic
Herbs: fresh dill, pepper, and salt
Arugula
Handful of parmesan cheese
Lemon
Preparation method
Place a frying pan and a wok on the heat and add a pinch of coconut fat to both.
Put the salmon fillets in the frying pan and cook for about 5 – 8 minutes. Season with pepper and salt, and add the dill and spring onions in the last 3 minutes.
Add the green asparagus to the wok and stir-fry for about 5 minutes. Add pepper, salt, and the clove of garlic to taste.
Prepare two plates with a bed of arugula and some parmesan cheese. Distribute the green asparagus over this. Finally, place the salmon fillets on top. Finish with some lemon juice and extra dill.
Variation tips
Also delicious with a soft-boiled or poached egg on the side.
Add toasted pine nuts for an extra crunch.

A serving of salmon fillet (125 grams) is 260 kcal and contains 25 grams of protein, 16.25 grams of fat, and 0 grams of carbohydrates. Moreover, it is rich in vitamin C (4.875 mg), calcium (11.25 mg), and magnesium (33.75 mg).
A serving of green asparagus (100 grams) is 20 kcal and contains 0.1 grams of fat, 3.9 grams of carbohydrates, and 2.2 grams of protein. Asparagus is also rich in vitamin C (5.6 mg), calcium (24 mg), and magnesium (14 mg).
