Recipe for pumpkin salad with lentils and serrano ham explained
Ingredients
1 bag of arugula
300 grams of pumpkin cubes
teaspoon of thyme
6 slices of serrano ham
200 grams of lentils
75 grams of pecorino
1 red onion
1 tablespoon of balsamic dressing
2 tablespoons of walnuts
Preparation method
Preheat the oven to 200 degrees. Place the pumpkin cubes in a baking dish, drizzle with some olive oil, pepper, salt, and thyme. Bake for 25 minutes in the oven.
Meanwhile, slice the onion into rings.
Spread the arugula over two plates and distribute the onion rings over the salad.
Also distribute the lentils and the serrano ham.
Remove the pumpkin from the oven and let it cool for 10 minutes.
Distribute the pumpkin cubes over the salad.
Finish with the pecorino and the walnuts, and finally add a splash of balsamic dressing.
Variation tips
Enjoy as lunch or dinner! Serve for the bigger eaters (man of the house) with a piece of chicken or fish.
