Recipe: healthy sauerkraut dish with chicken shawarma

In this article about the recipe for healthy sauerkraut casserole with chicken shawarma: Sauerkraut is traditionally common in winter recipes. A few weeks ago, we already posted a recipe for sauerkraut salad. Now, sauerkraut is not necessarily a favorite food for most people. But when it's incorporated into a tasty casserole with lots of cheese and potatoes, then we like it. Unfortunately, that's not a very healthy meal, so we searched for an alternative. Meet your new best friend: the healthy sauerkraut casserole with chicken shawarma. Check out what you need and make it yourself!

Recipe for healthy sauerkraut casserole with chicken shawarma explained

Ingredients

  • 1 celeriac

  • 2 parsnips

  • 1 tablespoon mustard

  • 1 splash of almond milk

  • 300 grams chicken breast

  • 2 teaspoons shawarma spices

  • 250 grams sauerkraut

  • 1 sweet pointed pepper

  • 100 grams mushrooms

  • 1 red onion

  • 2 cloves of garlic

  • half a bag of grated 30+ cheese/parmesan cheese

Preparation method

  1. Ideally, season the chicken breast with the shawarma spices and a splash of olive oil a few hours in advance.

  2. Peel the celeriac and parsnip and cut into pieces. Cook in a layer of water with pepper and salt for 15 minutes.

  3. Cut the mushrooms, red onion, and pepper into pieces.

  4. Put a bit of coconut fat in a frying pan and fry the chicken breast. After about 5 minutes, add the vegetables and press in the cloves of garlic. Then add the sauerkraut and stir-fry the mixture for a total of about 10 minutes.

  5. Preheat the oven to 180 degrees.

  6. Drain the celeriac and parsnip and mash with a masher. Add the mustard and almond milk until it becomes a smooth and creamy puree.

  7.  Spread a layer of puree over a baking dish and then a layer of the chicken and vegetable mixture. Repeat this until it's all used up, and ideally finish with a layer of puree.

  8. Finally, sprinkle the cheese over the casserole and let it bake in the oven for about 30 minutes.

  9. Et voila, a healthy sauerkraut casserole that consists solely of vegetables, chicken breast, and a bit of cheese!

Variation tips

  • You can optionally add a sweet potato to the puree for a bit more texture.

  • You can also make this sauerkraut casserole vegetarian by omitting the chicken breast.

  • As a garnish, it's nice to sprinkle some spicy arugula over your portion!

  • A serving of sauerkraut casserole contains 390 calories, of which 11.5 grams of fat, 33.9 grams of carbohydrates (mostly from vegetables), and 36.75 grams of protein. A responsible meal!
