Recipe for fresh salad with smoked chicken, mango, and coriander explained

Ingredients (2 persons)

  • 200 grams whole grain pasta

  • 180 grams smoked chicken

  • 1 Mango (or pre-cut into pieces)

  • 1 Avocado

  • 1 spring onion

  • 60 grams soft goat cheese with honey

  • 1 bag of arugula salad mix

  • 3 sprigs of coriander

  • 1 red chili pepper

  • 4 tablespoons olive oil

  • 1 lemon

Preparation method

  1. (Optional) Cook the pasta al dente in about 5 minutes.

  2. Meanwhile, chop the mango, spring onions, smoked chicken, avocado, and red chili pepper.

  3. Put the olive oil in a bowl and add the red chili pepper. Squeeze the lemon into the mixture and stir well.

  4. Drain the pasta and let it cool for a moment. Then place it in a separate bowl.

  5. Add the salad mix to a large bowl and mix in the mango, spring onion, smoked chicken, and avocado.

  6. Drizzle the dressing over it and mix well again.

  7. Crumble the goat cheese over the salad.

  8. Finally, snip the coriander sprigs and distribute them over the salad.

  9. Et voilà, enjoy your meal!
