What a shame, because pumpkin has a delicious sweet, creamy, and warm flavor that goes well with autumn weather. With this recipe for pumpkin Brussels sprout salad, you have an ideal vegetable dish for the whole family or when you have guests over for dinner.

(4 servings)

  • 1 Pumpkin

  • 2 Elstar apples

  • 500 grams Brussels sprouts

  • 75 grams goat cheese with honey

  • 1 handful of pecans

  • 2 tablespoons curry spices

  • 2 tablespoons cinnamon

  • pepper & salt

  • 2 tablespoons mustard honey

  • 1 tablespoon balsamic vinegar

  • optional: 150 grams of lean bacon bits

Preparation method

  • Take a baking sheet out of the oven and line it with baking paper.

  • Preheat the oven to 210 degrees.

  • Cut the pumpkin into cubes with a sturdy knife. Preferably, you can leave the skin on, as it also contains many vitamins. Place on the baking sheet.

  • Spread the cubes over the baking sheet. Drizzle with some oil, pepper & salt. Place in the oven for 15 minutes.

  • Meanwhile, clean the Brussels sprouts and boil them briefly for 2 minutes. Drain and season with 2 tablespoons of curry spices and some pepper and salt.

  • Remove the baking sheet from the oven and also distribute the Brussels sprouts over the sheet. Place in the oven for 20 minutes.

  • Meanwhile, cut the apple into pieces. Melt a knob of coconut oil or some olive oil in a pan. Add the apple pieces and season with 2 tablespoons of cinnamon. Add a splash of boiling water and let the apples steam on low heat.

  • Optionally, you can fry some lean bacon bits to mix into the salad for an extra salty and crunchy bite.

  • Remove the baking sheet from the oven and place the vegetables in a bowl. Also, add the apples and mix together.

  • For the dressing, mix the mustard with the balsamic vinegar and a splash of water until you have a thin dressing.

  • Garnish the salad with the pecans, goat cheese, and the dressing.
