Quinoa pumpkin salad with pumpkin vinaigrette explained



Ingredients for the salad (3 servings)
– 1 butternut squash
– spices (1 tsp cinnamon, 1 tsp paprika powder, 1/2 tsp ginger)
– 150 grams quinoa
– 80 grams feta
– 40 grams pecans
– 75 grams arugula
– 20 grams pumpkin seeds
– 100 grams pomegranate seeds
– salt & pepper
Preparation method salad
1. Preheat the oven to 200ºC and peel and cut the butternut squash into small cubes (the size of a dice). Place the pumpkin on a baking sheet and drizzle with 1 tbsp olive oil and the spices, mix well. Bake until tender for 15-20 minutes.
2. Cook the quinoa according to the package instructions.
3. Allow the pumpkin and quinoa to cool until both are lukewarm. Then mix with the remaining ingredients. Serve the salad as lunch, dinner, or a side dish.
Tip! Make plenty so you can enjoy this quinoa pumpkin salad for several days as lunch, but only add the dressing when you are ready to eat.
Ingredients pumpkin vinaigrette
– 1/4 cup pumpkin puree (you can easily make this yourself with some leftover pumpkin)
– small clove of garlic, minced
– 1 tbsp balsamic vinegar
– 2 tbsp maple syrup
– 1 tbsp mustard
– 1/3 cup olive oil
– 1 tbsp dried thyme
– pepper & salt
Preparation method pumpkin vinaigrette
Mix all the ingredients for the vinaigrette in a food processor. Add salt & pepper to taste and serve with your favorite salad, or with the quinoa pumpkin salad! Any leftovers can be stored for 5 days in the refrigerator or 3 months in the freezer.
