Lunch inspiration: stuffed salmon omelette

In this article about lunch inspiration filled salmon omelet: Salmon is packed with omega-3 fatty acids, proteins, potassium, magnesium, and vitamins B and D. Combine that with an egg and some vegetables, and you have what we consider a perfect meal. This omelet can be eaten both cold and warm, and for breakfast, lunch, or dinner!

Lunch inspiration filled salmon omelet explained

Ingredients for 2 people:
– 1 tbsp oil
– 4 eggs
– 100 grams smoked salmon
– 1 onion
– 200 grams spinach (or alternate with, for example, broccoli and peas)
– pinch of curry powder
– 1 spring onion or another favorite herb

Preparation method:
1. Break the eggs into a bowl and whisk them together.
2. Cook the vegetables in the oil and season with curry, pepper, and salt. Distribute the vegetables evenly in the pan.
3. Evenly distribute the salmon over the vegetables.
4. Pour the egg mixture over the vegetables and salmon and cook on low heat (5-10 min). If you are using an oven-safe pan, continue cooking the omelet in the oven (+/- 10 min), this way the top will cook beautifully.
5. Serve with the spring onion.
