Italian chicken with pumpkin spaghetti

Italian chicken with pumpkin spaghetti explained

Ingredients (for two people)

  • 300 grams (Italian) chicken breast. For seasoned or self-season with Italian herbs and oregano.

  • 400 grams Pumpkin Spaghetti (AH)

  • 150 grams Chestnut Mushrooms

  • 2 Shallots

  • 2 Cloves of Garlic

  • 1 Spring Onion

  • 1/2 Zucchini

  • 150 ml Cooking Cream (light)

  • Parmesan cheese

Preparation method

  • Chop all the vegetables small.

  • Stir-fry the chicken breast with a pinch of coconut butter for about 5 minutes.

  • Add the mushrooms, zucchini, shallots, spring onion, and 1 clove of garlic.

  • Meanwhile, stir-fry the pumpkin spaghetti in a separate pan with pepper, salt, and 1 clove of garlic.

  • Add the cooking cream to the chicken mixture and let it simmer gently.

  • Serve the chicken mixture on the pumpkin spaghetti and optionally add Parmesan cheese.

  • Enjoy your meal!

Variation tips

  • Make the recipe even tastier (but less healthy) by adding two tablespoons of pesto to the sauce.

  • Finish with some arugula.

  • Vary with tomato paste and diced tomatoes for a red sauce.
