The spices ensure that every bite is bursting with flavor. The coconut milk, tomato, and onion give the soup its sweetness, add half a red chili pepper for a bit of heat!
Hearty chickpea-coconut soup with a kick explained
Ingredients for 4 people
– 1 tbsp coconut oil
– 400 grams tomatoes
– 450 grams chickpeas (drained)
– 2 onions
– 3 cloves garlic
– half a red chili
– 400 grams coconut milk
– 1 1/2 tbsp garam masala
– 1 tbsp curry powder
– 1 tsp cumin
– half a lime
Preparation method
1. Chop the tomatoes, onion, garlic, and red chili.
2. Sauté the tomatoes, onion, and red chili in the coconut oil over medium heat. Add pepper and salt. Reduce the heat and cook the tomatoes and onions until both are soft (about 10 minutes).
3. Add the chickpeas, garlic, garam masala, curry powder, and cumin to the mixture and stir well, letting it sit on the heat for 2 minutes.
4. Now add the coconut milk, stir well, and let it simmer gently for about 10 minutes.
5. Finally, add the juice of half a lime and blend the soup until smooth with an immersion blender. Taste, and add more pepper and salt if desired. Enjoy!
