Watercress is almost a forgotten vegetable in the Netherlands. It's a pity, because the fresh leaves are full of flavor and make a good alternative to other types of lettuce. Compared to other types of lettuce, watercress also has a higher nutritional value; of all leafy greens, watercress has the highest amount of omega-3 fatty acids. Additionally, the vegetable is rich in vitamins A, C, and E, and contains a significant amount of iron. So there's no reason not to make this fresh watercress salad with strawberry and apple! Tip: this is a side dish; for a complete meal, a protein source should be added (fish, chicken, meat, tofu, etc.). This fresh watercress salad is, for example, delicious at a summer barbecue!
Fresh watercress salad with strawberry and apple explained
Ingredients for 4 large or 6 smaller servings:
– 500 grams of watercress with stems
– 20 strawberries
– 2 granny smith apples
– 2 spring onions
– 2 tbsp white wine vinegar
– 3 tbsp extra virgin olive oil
– 1 tsp mustard
– 1 tbsp honey
– handful of fresh oregano or 1 tbsp dried oregano
Preparation method:
1. Cut off about half of the stems of the watercress and discard them or use them for soup, for example. Cut the leaves from the other half and chop the remaining stems into pieces.
2. Slice the strawberries, apples, and spring onions.
3. Mix the vinegar, oil, mustard, honey, oregano, and salt and pepper in a bowl.
4. Combine everything in a large bowl and toss. Bon appétit!
