Christmas recipe roasted cauliflower with almond and paprika explained
Ingredients for 1 cauliflower:
– 1 cauliflower
– 3 cloves of garlic
– 1 tbsp paprika powder
– 2 tbsp dried thyme
– 2 tbsp olive oil
– 1 orange
– 1 tbsp lemon juice
– 1 can of peeled tomatoes (400g)
– 35g almonds
– handful of fresh parsley


Preparation method:
1. Preheat the oven to 180 degrees.
2. Grate the peel of the orange and then squeeze the orange.
3. Peel the garlic and crush it into a paste in a mortar together with the paprika powder, 1 tbsp thyme, and 1 tbsp orange juice. Then add the olive oil and salt and pepper. Mix into a paste.
4. Remove the outer leaves of the cauliflower, and cut the stem of the cauliflower as far as possible.
5. Coat the cauliflower with the paprika mixture. Then drizzle the lemon juice over it. Place in a baking dish or oven-safe pan and cover with aluminum foil or the lid of the pan. Cook the cauliflower in the oven for 60 – 90 minutes, depending on the size of the cauliflower.
6. Meanwhile, chop the almonds, parsley, and the rest of the thyme.
7. After 60-90 minutes, remove the cauliflower from the oven and distribute the tomatoes (cut into smaller pieces) in the dish, also sprinkle the almonds, orange juice, parsley, and 1 tbsp thyme over the cauliflower. Return to the oven for 15 minutes.
8. Serve the roasted cauliflower whole or sliced with, for example, rice and green vegetables. Or serve as part of a shared dining.
