Christmas recipe pumpkin cake with walnuts explained

Ingredients

  • 3 eggs

  • 400 grams pumpkin cubes

  • two teaspoons coconut blossom sugar

  • 150 grams oat flour

  • 2 scoops vanilla protein powder

  • 1 tablespoon baking powder

  • 3 tablespoons cookie and speculaas spices

  • 2 tablespoons cinnamon

  • 2 handfuls of walnuts

  • coconut oil

Preparation method

  1. Set the oven to the grill setting and let it preheat.

  2. Spread the pumpkin cubes over a baking dish and drizzle with some olive oil and cinnamon. Let roast for 10-15 minutes until the pumpkin is soft.

  3. Meanwhile, put the oat flour, eggs, coconut blossom sugar, baking powder, and protein powder in the blender and mix until a batter forms.

  4. Remove the pumpkin from the oven and puree the pieces with an immersion blender.

  5. Preheat the oven to 180 degrees.

  6. Add the pumpkin puree and spices to the batter and mix again.

  7. Stir the walnuts into the batter.

  8. Grease the cake pan with coconut oil.

  9. Pour the batter into the cake pan and place in the oven for 40 minutes.

  10. Remove the cake from the oven and let it cool. Enjoy your pumpkin cake!
