Ingredients (2 persons)

  • 1 Cauliflower

  • 1 Bell pepper

  • 1 Spring onion

  • 1 Clove of garlic

  • Curry powder

  • Paprika powder

  • Parmesan cheese (optional)

Preparation method

  • Wash the cauliflower, remove the leaves, and cut into florets.

  • Place a wok on the heat and melt a teaspoon of coconut fat.

  • Add the florets to the pan and sauté for 1 minute on low heat. Season the cauliflower florets with plenty of curry and a pinch of paprika powder. Then add a small layer of water and let it steam with the lid on the pan for about 3-5 minutes until the florets are a bit softer and al dente.

  • Meanwhile, chop the bell pepper and spring onions.

  • Remove the lid from the pan and increase the heat a bit, add the bell pepper and spring onions, and squeeze in the garlic clove. Stir-fry for 5 minutes.

  • Optional: if you are not eating any carbohydrates and just have a piece of meat or fish on the side, it can be nice to sprinkle some parmesan cheese on top for extra body and flavor.

Tip: this dish is delicious in combination with a piece of salmon, steak with mushrooms, or tender chicken.

Enjoy your meal!
