Recipe: carrot noodles with chicken and cashews

Just what you like. — Ingredients for 3 people carrot noodles with chicken and cashews 👪: – 6 large carrots (+/- 600 grams) – 300 grams chicken breast – 1 zucchini – Large handful of cashews – 1 tablespoon olive oil

Recipe for carrot noodles with chicken and cashews explained

Sauce:
– 4 tablespoons cashew butter (buy in a jar or make it yourself by grinding cashews for 5-10 minutes in a food processor until it becomes a paste)
– 1 tablespoon soy sauce
– 2 cloves garlic (minced)
– 1 tablespoon sambal
– Small lime or 1/2 larger lime
– 1 tablespoon honey
– 1/2 cup vegetable broth

Preparation:
1. Put a pot of water on the stove and bring to a boil. Meanwhile, use the spiralizer to cut the carrots into thin long strands. Cut the zucchini and chicken into pieces.
2. Heat 1 tablespoon of olive oil in a large pan and cook the chicken with the zucchini until done (+/- 7 min). Meanwhile, mix all the ingredients for the sauce and cook the carrot strands for 1-2 minutes until slightly tender.
3. Push the chicken and zucchini to one side of the pan, and add the sauce next to it in the pan, waiting for it to thicken slightly (+/- 2 min).
4. Add the carrot strands to the pan and mix everything together. Let it cook for another 2-3 minutes and serve with the cashews.
