Banana bread à la Lotte Nevin explained
Ingredients
130 grams spelt flour
130 grams oat flour
4 tbsp coconut blossom sugar
1 tsp baking powder
1 packet baking soda
50 ml almond milk
2 tsp vanilla extract
6 tbsp coconut oil
5 medium bananas

Preparation method
Preheat the oven to 180 degrees.
Put the spelt flour, oat flour (blend the oats in a blender until flour), coconut blossom sugar, baking powder, and a pinch of sea salt in a bowl.
In a blender, mix the bananas with the almond milk, vanilla extract, and coconut oil until smooth.
Add the mixture to the dry ingredients in the bowl and mix well with a spatula.
Place a piece of baking paper in a baking pan and spread the mixture over it. Optionally, add extra ingredients like chocolate or nuts.
Bake the banana bread for 35 to 40 minutes.
Nutritional value
A slice of banana bread contains approximately 176 calories, of which 4.5 grams of fat, 28 grams of carbohydrates, and 3 grams of protein. This is without the addition of dark chocolate or nuts. You can enjoy it as a snack. Since it is made from pure and nutritious ingredients and contains no additives, it is a healthier alternative than cookies or candy.

Delicious with chunks of dark chocolate in it!
Slice the banana bread and freeze what you don't eat immediately. This way, you can take out a slice from the freezer each time during your week.
