Ingredients for stuffed avocado

(for 2 persons)

  • 2 avocados

  • 100 grams of Dutch shrimp

  • 4 cm cucumber

  • 1 spring onion

  • 1 tablespoon low-fat quark

  • 1/2 lemon

  • dill

  • pepper and salt

Preparation method

  1. Chop the cucumber and spring onion finely and place in a bowl.

  2. Halve the avocados, make incisions for small cubes, and scoop out into the bowl.

  3. Mix the shrimp into the mixture.

  4. Squeeze half a lemon over the mixture and add a spoonful of low-fat quark.

  5. Season the mixture further with dill and pepper and salt to taste.

  6. Scoop the mixture into the hollowed-out avocados.

  7. Serve the stuffed avocado with a piece of grilled salmon and green beans as dinner or as a nutritious snack.
