Oatmeal pancakes with mint and raspberries explained

Requirements

(for 2 people)

  • 1 teaspoon baking powder

  • 1 tablespoon honey or agave syrup

  • 1 teaspoon cinnamon

  • 100 ml almond milk

  • Coconut oil

  • 35 grams oatmeal

  • 1 banana

  • 1 egg

  • Toppings: raspberries, mint, cottage cheese, and agave syrup.

Preparation method

  1. Blend the oatmeal flakes in the blender until they become oat flour.

  2. Add the banana and mix again.

  3. Then add the egg, baking powder, honey, and cinnamon.

  4. Finally, add some almond milk to thin the batter. (Note: the batter doesn't need to be as thin as regular pancake batter, so go by feel).

  5. Heat some coconut oil in a frying pan and make small pancakes.

  6. Stack the pancakes on top of each other.

  7. Garnish as desired with the toppings.

  8. Enjoy your meal!
