Ingredients for Broccoli Rice Bowl (2-3 people)

For this broccoli rice bowl, you obviously need broccoli rice. We also use bimi for this recipe, a sister of broccoli and a cross between broccoli and asparagus with a nice bite. The soy sauce chicken, along with the other vegetables and flavor enhancers, makes this recipe a nutritious and tasty dish. Here’s what you need for this broccoli rice bowl:

For the base

  • 400 grams of broccoli rice

  • 1 bag of bimi

  • 1 red bell pepper

  • 1 can of lentils (60 grams)

  • 1 shallot

  • 1 clove of garlic

  • Optional: curry spices

For the chicken

  • 1 handful of mushrooms

  • 500 grams of chicken thigh fillet

  • 2 tablespoons of soy sauce

  • 1 tablespoon of soy sauce

  • 1 tablespoon of paprika powder

  • 1 tablespoon of curry

  • 1 shallot

  • 1 clove of garlic

For the sauce

  • 1 tablespoon of tahini

  • 1 tablespoon of peanut butter

  • 1 tablespoon of curry

  • 1 tablespoon of chili sauce

  • 1 tablespoon of water

For the garnish

  • 2 tablespoons of sweet onions

  • 2 tablespoons of pickles

  • 2 boiled eggs

How to Make the Broccoli Rice Bowl with Soy Sauce Chicken

For this broccoli rice bowl, you need quite a few ingredients, but in the end, it’s not much work. If you marinate the chicken in advance, you can have this dish on the table in 20-30 minutes.

  1. Take the chicken fillet and a bowl or a bag. Cut the chicken fillet into cubes or pieces and add the spices to the chicken. Do this preferably in the morning or a little beforehand to marinate.

  2. Grab a cutting board and chop the bimi, bell pepper, mushrooms, shallots, garlic, sweet onions, and pickles. Set aside half of the shallots, garlic, and mushrooms for the chicken. And save the sweet onions and pickles for garnish.

  3. Use a large frying pan and add the bimi with a thin layer of boiling water. Let it steam for 5 minutes. If the water hasn’t completely evaporated, drain the rest. Then grease the pan and stir-fry the bimi with a shallot, garlic, and the bell pepper. Add the broccoli rice and mix everything together. Season with pepper & salt and possibly some curry spices.

  4. Meanwhile, also sauté the other shallot and garlic in another frying pan, add the chicken fillet and mushrooms, and cook until the chicken is done.

  5. Also, boil eggs, one or two for each person.

  • In a bowl, mix the tahini, peanut butter, curry & chili sauce with a little water until the sauce reaches a nice thickness. Add more water as needed. Tip: you can also warm the peanut butter and tahini a bit in the microwave so that it melts better.

  • Plate the dishes. Start with the broccoli rice, distribute the chicken on top, and finish with some sweet onions, pickles, the sauce, and a boiled egg.
